Vincent Dilewyns started brewing beer for brewing in 1999 at Grembergen as a brewer of breads. In 2005 , he was asked to serve his own beer on the occasion of the presentation of a book published by his brother. He brew 1250 liters of his own beer, under the name Vicaris, at De Proefbrouwerij in Lochristi.
Because the demand for this beer was so large a second brew was also produced. The range was expanded with Vicaris General and Vicardin . His beers captured a lot of prices in the following years. As a result, he decided to stop his dental practice in 2008 and continue professionally as a beer company.
In 2010 De Proefbrouwerij brew 700 hl Vicaris beers. At the end of 2010 a property was acquired in the Vlassenhout industrial area and a brewery, storage tanks, bottle and label machine in Italy. On May 20, 2011 the official opening took place by Dendermond mayor Piet Buyse.
